Howdy y'all!! Before anything else, I love being a mom and wife. Other than that I love to sing, create awesome crafts, and especially create new recipes that the whole family can enjoy!! With Fall a few days away, I've been searching EVERYWHERE for a good pumpkin cookie recipe. I found a few recipes but none that I really liked or what my taste buds wanted. I did find a healthier alternative to plain chocolate chip cookies using pumpkin but they had no flavor besides the chocolate chips, so I decided to alter the recipe, make it my own and to my liking. And voila! The creation of "Pumpkin Pie Chocolate Chip Cookies!" I just thought of what I put in my pumpkin pies to make them taste so darn good and thought I'd just add them to the cookie batter. BEST DECISION I'VE EVER MADE!! I had to fight myself to stop eating the batter and actually bake some of the cookies!
These can be altered to be vegan friendly cookies if you use vegan chocolate chips, but I just used Nestle's Dark Chocolate chips because that's what I had on hand. OM NOM NOM!!
Pumpkin Pie Chocolate Chip Cookies
Perfect for any Fall event! Or just to self-indulge in at home.Ingredients:
In one bowl mix (Dry Ingredients):
1 1/2 c All Purpose Flour (you could use gluten free all purpose flour as well)
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 tsp Baking Powder
In another (bigger) bowl mix:
1 c Packed Brown Sugar (Or a sugar substitute like Date suger, coconut sugar, or one of your choosing)
1/2 c Sunflower oil
1 1/2 c Pumpkin Purée (NOT PUMPKIN PIE FILLING)
1/4 c Applesauce (I used the no sugar added kind)
1/2 tsp Vanilla Extract
1 tsp Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Ground Cloves
1 c Dark Chocolate chips (You can use vegan chips to make the recipe vegan friendly or ones that are nut, egg, dairy, and soy free like the "Enjoy Life" brand)
Instructions:
Preheat oven to 350°
Mix dry ingredients in a small bowl and set aside. In a bigger bowl beat together brown sugar, sunflower oil, pumpkin puree, applesauce, vanilla extract, cinnamon, ginger, and cloves until smooth. Slowly add the dry mix and mix with a spatula until there are no clumps. Then fold in your chocolate chips. You can have as many as you want, I only suggested 1 cup because I figured there needed to be some order. LOL!! Use a spoon or cookie scoop to place on a cookie sheet lined with parchment paper. They don't really spread out that much so you could group them with a 2 inch space in between each.
Bake for 15 minutes. Let cool for 5 minutes before moving them to a decorative plate or dish unless you like blistered fingers. Eat, melt into a heavenly bliss, and enjoy!! Happy Fall, Y'all!!
I hope you enjoy this recipe as much as I do!! Stay safe and God Bless!!
Love,
Ashley Brooke
